What is especially great about the avocado toast trend is that it can be eaten for breakfast, lunch, a snack or even dinner!  It fits into any meal category.  When you pair it with eggs as shown in the recipe below, you have a healthy meal: carbohydrate (bread), protein (eggs) and a healthy fat (avocado).  That sounds like a great meal to eat any time of day, don’t you think?

I wasn’t really that surprised by this super trend. What surprised me though was the outrageous prices that people were paying for this fancy toast!  Don’t they know how inexpensive it would be to make this avocado toast recipe at home?

Quick and Easy to Make Meal

Well, not only is it cheaper to make this avocado toast recipe at home but it is also super simple!  This meal only takes about 10 minutes and you will have a restaurant quality, picture perfect avocado toast ready to eat without the hefty price tag!

So where do we begin? With the avocado of course!

First, it all starts by choosing a perfectly riped avocado. There are many different types of avocado but the most popular seems to be Haas because it is found in most supermarkets. I want to look for an avocado that is slightly soft when given a light squeeze, almost the same consistency of a ripe peach. However, grocery store avocados tend to be rock hard which is a sign that they are not yet ripe or completely soft.

When is an Avocado Ripe?

If you plan on making this avocado toast recipe often, then it’s a good idea to buy 5-6 avocados at a time so you give them time to ripen.  Please watch the video below to help you know when an avocado is unripe, ripe or overriped.

  • After you buy the avocado, be sure to keep it at room temperature.
  • A ripe avocado should be soft but not too soft or squishy.

This easy trick works wonders for getting your avocados ripened quickly. To speed up the process, put your avocado in a brown paper bag with an apple in it and roll the top of the bag over to seal it.

The ethylene gas emitted from the apple and from the avocado will be trapped in the bag and cause it to ripen faster. You still have to wait a day or two but it’s definitely faster than waiting a full week for these beautiful fruits to ripen!

One Bad Way to Ripen an Avocado

One thing I have read online about ripening avocados is to microwave them, don’t do this!  Trust me!  I tried once and not only did my whole house smell very weird for the next few days but the avocado came out hot and was oozing brown juice.

The avocados also sported lots of brown spots when I cut into it. Yes, microwaving the avocado did make it softer but not by any means ripe or tasty. Tried and true patience is the way to go.

Okay, so once you have your perfectly ripe avocado, you are ready to make the best egg and avocado toast!

  • Simply mash the avocado in a bowl with lime juice, salt and pepper and your delicious avocado spread is ready!  It’s almost like a super simple guacamole! If you want to add a little spice, throw in some red pepper flakes or Sriracha sauce too (now you’re getting restaurant grade food!).
  • The eggs and toast can be cooked completely to your preference. I like to buy a high quality multi-grain bread that is a little on the thicker side so my toast stays crispy and offers a sturdy base when the eggs get added. While I love my avocado toast with eggs fried, you can also switch it up and try your avocado toast with sunny side up eggs or even scrambled eggs work great too!

Assembly is quite self explanatory but just in case you were wondering, spread the avocado mix onto the toast and then just top it with your cooked eggs. Many people believe avocados can’t be super healthy because they are so high in fat.  Well, they are.  In fact, over 77% of the calories in an avocado are from fat making it one of the fattiest foods in existence!  A medium whole avocado contains about 250 calories and 23 grams of fat.

But don’t panic!  These numbers don’t tell the whole story.  All fats are not created equal.  Avocados are high in the good kinds of fats called  monounsaturated and polyunsaturated fats.  Although avocados contain these good fats, you still need to be careful not to eat too many servings in one day(including avocado toast)  because you can quickly consume a lot of calories if you do.

Ingredients

  • 2 eggs (fried sunny side up)

Instructions

  1. Prepare toast and fried eggs to personal preference.
  2. Peel and mash avocado with the lime juice, salt and pepper.
